The present invention relates to a method for producing fermented brown rice by identifying a new strain of Lactobacillus genus for brown rice fermentation and fermenting brown rice using the same. Using the novel strain of Lactobacillus genus for the brown rice fermentation of the present invention and the fermented brown rice manufacturing method using the same, it is possible to survive the lactic acid bacteria and the yeast for a considerable period of time in the brown rice fermentation, Particularly, the effect of significantly increasing the production of gamma-aminobutyric acid (GABA). GABA has been reported to be capable of controlling various physiological mechanisms such as sedation effect, antistress effect and blood pressure, normalizing function of renal function, suppression of increase of blood cholesterol and triglyceride, obesity, and visual acuity improvement. It would be useful for the development of various medicines, health supplements and functional beverages. In addition, when the strain of the present invention is used as a strain of the genus Lactobacillus, it is possible to produce a GABA high-content fermented brown rice only by adding glutamic acid at a low concentration, so that it can be used for simple and economical functional fermented rice mass production.
