The food preparation with fresh thyme contains a homogenate of fresh thyme treated with high pressure, which comprises a carrier in the form of hydrocolloids or hard candies. The food preparation with fresh thyme further contains flavouring agents, fruit juice, vitamins, minerals and thyme extracts. The method of production lies in the fact that the homogenate, after being mixed with the hydrocolloids, is heated to a temperature of 60°C up to the boiling point of the mixture for at least 10 seconds and, then, the mixture is cooled to the pouring temperature and is filled into moulds or placed hot into the consumer package. Or the homogenate is mixed with hard candies, boiled and further processed according to the conventional manufacturing procedures for hard candies i.e. it is drawn, divided, moulded and left to harden, freely or in a mould, prior to packing into the consumer packaging.
