PROBLEM TO BE SOLVED: To provide an egg yolk pressured gel for ingredients having flavor of raw egg, used for rice balls or the like.;SOLUTION: An egg yolk pressured gel 2 for ingredients used for rice balls or the like contains egg yolk of 85 to 97 mass%, seasoning such as soy source of 3 to 15 mass% as essential components and having salinity concentration of 4 mass% or less and viscosity at 25°C of 1.6 to 390 Pa s and makes rice balls with flavor of rice with raw egg, which holds the gel in the rice balls 1 as an ingredient.;SELECTED DRAWING: Figure 1;COPYRIGHT: (C)2018,JPO&INPIT
