The method of making hard-boiled egg from sterile liquid egg white (1) and egg yolk (2), comprises continuously and simultaneously heating a specific flow of liquid egg yolk and liquid egg white below the coagulation temperature, extruding and heating the flow of preheated egg yolk for obtaining a solid nucleus of egg yolk, extruding and heating the flow of preheated liquid egg white to solidify into a shell around the nucleus or egg yolk, cooling the whole white and solid yolk, and cutting the obtained product along a finite length and then packaging individually. Independent claims are included for: (1) a device for making hard-boiled egg from sterile liquid egg white and egg yolk; and (2) an egg product.
