The present invention consists in a new procedure relating to the industrial production of a food made of flour of chickpeas, characterized by evaluation of the density of the compound to be subjected to preparation, processing type of fry cooking, pre-frying and freezing storage type and subsequent distribution according to the dictates of the so-called "cold chain".
