To provide a method for roasting raw coffee beans and coffee beans capable of providing a coffee extract having a desired flavor by rational or efficient adjustment.SOLUTION: In a method for roasting raw coffee beans, continuously carried out are a water absorption step of passing through water dipping treatment for dipping raw beans in, for example, spring water of Kurobe city and draining treatment for leaving the raw beans standing at room temperature until surfaces of the raw beans are dried so as to control a weight of the raw beans to be 1.5 to 2.5 times of the raw beans before the water dipping treatment, and a roasting step of reducing a weight of roasted coffee beans to 10 to 15% of the coffee beans before the roasting treatment.SELECTED DRAWING: Figure 1
