The application relates to a series of uvarum trachomatis which are determined to be serius and deposited into DEPOSIT No. 36p of dbvpg, and also relates to the use of uvarum trachomatis which is determined to be serius (dbvpg 36p) in the production of food. The food obtained by alcohol fermentation, and the screening method of sack group yeast varieties suitable for alcohol fermentation, especially grape fermentation, is an insulating channel for these flower yeast.
