The invention relates to a method for producing a ready-to-eat food product, in particular a method for producing a flour from extruded cereals and legumes having high nutritional value, since they have high protein availability, healthy starches and enzyme removal. Said method comprises the following main steps: receiving and storing raw materials and supplies; cleaning grains by screening; milling cereal and legume grains; preparing the batch; feeding supplies into the mixer; dosing and mixing micronutrients; adding micronutrients (only if required); mixing, extruding; transporting by air turbines; drying pellets; milling pellets; and packaging, weighing and sealing.
