The present invention relates to a production method of a triple-aged salted pollack roe and to a salted pollack roe produced thereby. The production method of a double-aged salted pollack roe comprises the steps of: (A) washing thawed pollack roe, mixing the washed pollack roe and a first seasoning solution containing fermented lactic acid bacteria using a tinter, coloring the same, and primarily aging the same; (B) mixing the primarily aged pollack roe and a second seasoning solution containing fish powder to secondarily age the same; and (C) packaging the second aged salted pollack roe in a third seasoning solution. The texture of the pollack roe is excellent, the fishy taste does not occur, the functionality is excellent, and the storage period is long even if the salt content is lowered.
