The present invention relates to a production method of brewed vinegar using traditional liquor, which produces the brewed vinegar by fermenting the traditional liquor. The production method comprises: a distillation step of distilling traditional liquor to prepare acetic acid fermentation broth with the alcohol content of 6 to 9%; an acetic acid fermentation step of producing a vinegar stock solution by mixing and aging acetic acid bacteria in the acetic acid fermentation broth; and a finishing step of producing the brewed vinegar by clarifying, filtering, and aging the vinegar stock solution.
