Oyster depuration display unit for high-end restaurants

Considerable interest has been generated recently onudconsumption of live oysters in high-end restaurants in cities suchudas Kochi. A major lacuna in this lucrative and emerging enterpriseudis the lack of consumer confidence on quality of live oysters,udparticularly purity of oysters with respect to microorganisms. Inuda meeting with a large number of chefs of star hotels in Kochi atudDavid Hall on 9th June 2010 organized by the CGH Earth group,udscientists of CMFRI gave an exposition on farming of oysters andudmethods of its purification.udA consensus that emerged during the meeting was that oysterudpurification should be done in a manner which is visible to theudrestaurant clients. Accordingly the CMFRI is proposing a modeludULTRA-PURE DEPURATION DIPLAY UNIT (DDU) the details of whichudare presented in this manual.
