For most consumers, a can of tuna is the epitome of humble food. This, and other tinned seafood stalwarts such as sardines have long been associated with low-quality post-war eating. So it is perhaps unsurprising that canned seafood suffered during the last economic boom, as ever more affluent and health conscious consumers choose fresh and frozen fillets. But canned seafood is making a comeback, fueled by recessionary demand for value and, more recently, a significant improvement in products.
