The food safety-nutrition nexus.

This article discusses the issue of acrylamide in foods in the light of nutritional recommendations to make grain based foods the base of a diet and to increase dietary fibre and whole grain intakes. Aspects considered include: acrylamide intake and food safety; acrylamide as a carcinogen (breast cancer, lung, pancreatic and braincancers, ovarian and endometrial cancers); and the acrylamide-food safety and nutrition nexus.
