Application of the impedance phenomenon in the microbiology and hygiene of food

Rapid microbiological methods, which quickly evaluate the quality of food products, play an important role in food trade. Moreover, they are used in food safety assurance systems, e.g. HACCP. The article discusses a method based on the impedance phenomenon, its main basics, available impedance devices and the area of application of the impedimetric method in food microbiology and hygiene.
