摘要

The final stages in cooked ham production are possibly the most critical of the whole production cycle. Cooking and cooling the product require precise temperature control and timing to ensure the wholesomeness of the product and complete food safety, The cooking process helps to develop the sensory characteristics of the ham — colour, flavour, taste and texture — as well as bringing about a microbiological stabilisation of the product.
