Foodservice: The 40 billion dollar industry

The latest analysis of the foodservice sector compiled by BIS Shrapnel values the market (at consumer prices — i.e. inclusive of the value of the service component) at 30 billion dollar, or 40 billion dollar if alcoholic drinks are included. By comparison, in 2002 BIS Shrapnel valued the industry at more than 24 billion dollar — a figure that was expected to increase to 32 billion dollar by 2011. In the latest report, BIS Shrapnel also notes that consumers were spending more of their disposable income on foodservice as compared to other sectors.
