摘要

All methods of slaughter have issues related to animal welfare. However, approaches such as death in air or bleeding without stunning have been particularly cited as unacceptable. Anesthesia is used prior to slaughter but is not allowed in some countries due to residual chemical traces in fish tissues. Electrical stunning and slaughter, which minimize physical and biological effects, are receiving increased interest. Rapid slaughter is preferred over slower methods since it leads to improved fish quality.
