摘要

The changing wants, needs, and perceptions of consumers are strong drivers of some of the most significant trends in health, nutrition, and wellness. As individuals increasingly recognize the impact their food choices have on their health and the environment as a whole, many are beginning to shift their thoughts and actions accordingly. Several of the biggest health and nutrition trends are likely to have a positive impact on the demand for grain and cereal products, including consumption on their own, in recipes, and as ingredients in manufactured food products. The general shift toward more healthful eating patterns, the increasing adoption of more plant-based diets, the continued quest for highprotein foods, and aspects of the "free-from" movement are mostly favorable for grain and cereal food categories. While trendsetting consumers and their associated attitudes and changes in behavior are most prevalent in developed parts of the world, there is evidence that developing regions are beginning to follow these trends as well.
