Effects of inulin HPX and maltodextrins, as well as the potentially probiotic Lactobacillus plantarum 14 strain, added separately and in combination to white cheese during manufacture, were investigated on the gastrointestinal microflora of Wistar rats. The prebiotics were added to the cheese at a concn. of 2.5%, whereas probiotic and synbiotic cheeses contained >=107 cfu/g of live L. plantarum cells. Counts of Bifidobacterium sp., Lactobacillus, coliforms and the MPN of anaerobic proteolytic bacteria were evaluated. After a 10-day feeding experiment, significant changes (P < 0.05) were noted in the MPN of anaerobic proteolytic bacterial spores, which were highest in the group receiving cheese containing the potentially probiotic strain and inulin HPX. Ingestion of low doses of prebiotics or synbiotics over a short period of time did not alter counts of Lactobacillus, Bifidobacterium or coliforms in healthy rats.
