摘要

A survey was conducted in Italy on consumer attitudes and purchasing habits for fresh-cut produce. Results discussed include: fresh-cut items most consumed; consumers perception of fresh-cut buying attributes; and improvements consumers would like to see in fresh-cut attributes in regard to prime purchase and product information components. It is concluded that the Italian fresh-cut industry needs to focus on food safety aspects and produce attractive high quality products to respond to the growing consumer demand for convenience.
