An Economic-Engineering Study of Ohmic Food Processing

The United States food marketing system in 1993 pur-Vchased some $139 billion of U.S. and imported animal, crop, and seafood products, to which it added about $635 billion in value (Gallo, 1994). Of this total value added, processing accounted for $121 billion (19.1%). Adding value in the food system means, generally, changing the form or the location of the raw products. Thus, a hog raised in southern Minnesota becomes bacon for a breakfast in California, by way of a packing plant in eastern Iowa.
