Trans fatty acids (TFAs) naturally occur, a low levels, in food such as in dairy products and meat from ruminant animals (for example, beef and lamb). They can also be produced industrially by process of hardening fats which forms partially hydrogenated fats. Hydrogenation produces oils with a longer shelf life and increased stability. These products are a source of TFAs and can be used in manufacturing and catering operations. The TFAs in these oils are referred to as industrially produced trans fatty acids (IPTFA).
