摘要

ABSTRACT Dadih is West Sumatera traditional food made by natural fermentation of buffalo milk in bamboo which contains some lactic acid bacteria (LAB) that produce some antimicrobial substance such as organic acid, diacetyl, hydrogen peroxide and bacteriocin or bactericidal protein. These substance especially bacteriocin have ability to inhibit the growth of food spoilage bacteria and some bacteriocin are stable in high temperature. This makes LAB can be used as an ideal biopreservatives becaus.
