In order to get basic data for setting heat sterilization conditions of acidfied carrot juice of pH less than 4.6 which is distributed at normal temperature, we tested with B. coagulans 6 strains and C. thermosaccharolyticum 6 strains and measured the heat resistance of the strains which could grow in carrot juice. 1) Among B.coagulans 6 strains, all strains grew in the carrot juice prepared to have pH 4.6. No strain grew in the carrot juice with pH equal to or less than 4.4. 2) The Heat resistance of strain No. 1027 in carrot juice (pH4.6) is the highest of the tested B. coagulans 6 strains. The D121℃ value is 0.06min, and the z value is 9.1℃ (6.1~17.9℃ for 95% confidence limit). 3) Among C. thermosaccharolyticum 6 strains, only strain No.3019 grew in carrot juice prepared to have pH 4.6. No strain grew in the carrot juice with pH equal to or less than 4.4.
