蔬菜是重要的维生素C源,了解常见蔬菜中维生素C含量对人们合理补充维生素C具有重要意义.采用碘量法测定了黄瓜,白萝卜,冬瓜和土豆四种蔬菜中的维生素C含量.结果表明:黄瓜的维生素C含量为10.60 mg/100g,白萝卜为22.50 mg/100g,冬瓜为15.25 mg/100g,土豆为13.82 mg/100g.其中白萝卜中维生素C含量丰富.%The vitamin C content of cucumber, white radish. melon and potatoes were determinated by Iodine titration method. The results showed that the vitamin C content of cucumber was 10. 60 mg/100g , the vitamin C content of white radish was 22. 50 mg/100g,the vitamin C content of melon was 15. 25 mg/100g, the vitamin C content of potato( Solanum tuberosum) was13. 82 mg/100g. It was concluded that the vitamin C content of white radish was richer.
