壳聚糖结合气调包装对樱桃萝卜保鲜的研究

     

摘要

Combination of chitosan coating and modified atmosphere packaging on the preservation of cherry radish was studied.Modified atmosphere packaging(3% O2,5% CO2,92% N2)and chitosan coating(chitosan concentration was 0.5%,1% and 1.5%,respectively)were combined to deal with cherry radish samples at 5℃.The results showed that 1.5% chitosan combined with modified atmosphere packaging could reduce weight loss rate,hollow rate and peroxidase activity,delay the decrease of hardness.At the same time,contents of VC and soluble sugar were maintained for the reasons of reducing of respiration rate.The results indicated that combination of chitosan coating and modified atmosphere packaging could improve the quality of cherry radish effectively.%研究壳聚糖结合气调包装对樱桃萝卜品质的影响。采用在5℃冷藏条件下,结合气调包装(气体比例3%O2,5%CO2,92%N2)和0.5%、1%、1.5%的壳聚糖溶液涂膜的方法对樱桃萝卜进行保鲜。结果表明:以1.5%壳聚糖结合气调包装处理的效果较好,可降低樱桃萝卜的失重率、糠心率和过氧化物酶活性以及延缓果实硬度下降。同时由于降低了呼吸作用,从而减少VC的氧化和可溶性糖的损失。壳聚糖结合气调包装的储藏方法可以有效地提高樱桃萝卜的保鲜效果。
