动物性食品三聚氰胺污染检测技术研究进展

     

摘要

动物性食品三聚氰胺污染严重威胁人类健康。详细综述了目前国内外动物性食品三聚氰胺污染的检测方法,主要包括理化检测方法如电位滴定法、升华法、苦味酸法、高效液相色谱法、气/质联用法、液/质联用法等;免疫检测方法如酶联免疫吸附测定法、胶体金免疫层析试验测定法等。%Melamine pollution in animal food has become a big threat to people's health. The advances on residues in animal food and detection methods of melamine,including physical and chemical determination method such as potentiometric titration,sublimation method,picric acid method,high performance liquid chromatography,gas chromatograph/mass spectrometry,and liquid chromatography/mass spectrometry;Immunoanalysis methods such as enzyme-linked immunosorbent assay,gold-immunochromatography assay,etc,were reviewed in detailed.
