露天酒罐原酒贮存酒质变化分析

         

摘要

The change in alcoholicity, ethyl caproate content, total acids content, and liquor body sensory feelings of base liquor in open-air pot during the storage was investigated. The results suggested that base liquor stored in open-air pots could realize rapid aging due to high temperature in summer. Accordingly, proper regulation of base liquor storage patterns could achieve satisfactory storage effects. (Tran. by YUE Yang)%分析了露天大罐贮存原酒过程原酒的酒精度、己酸乙酯、总酸及酒体感官变化。结果表明。露天大罐贮存原酒可利用夏季高温促进原酒快速老熟,调整原酒的贮存结构,实现良好的贮存效果。
