铜对枸杞白兰地品质的影响

摘要

铜元素是枸杞白兰地质量检测的一个重要指标,本文利用CuSO4·5H2O分别调整枸杞汁、枸杞发酵原酒以及枸杞白兰地原酒中铜的含量,从枸杞酒的发酵、蒸馏以及枸杞白兰地的陈酿等方面进行试验,通过研究分析铜元素在枸杞白兰地生产过程中的变化,严格控制铜在枸杞白兰地酿造生产过程中各环节的含量,为枸杞白兰地质量的提高及工艺的改进提供依据和指导.%Cu is an important index of wolfberry brandy.In this study,CuSO4·5H2O was used to adjust Cu content in wolfberry juice, wolfberry fermented base wine and wolfberry brandy. The experiments were performed in the process of fermentation, distillation, and aging.Through the analysis of Cu content change in brandy production process,Cu content was strictly controlled,which pro-vided evidence for improving the quality of wolfberry brandy and innovating the relative technology.
