酯化红曲霉的分离纯化及其在固态发酵中的应用研究

         

摘要

Functional Monascus strains with strong esterifying power were isolated from esterified Hongqu.Through morphological observation,the isolated Monascus strains were identified to be two Monascus species.Then four Monascus strains were selected as the experimental strains to produce solid Hongqu by solid-state pure-species fermentation in different substrate.Through the determi-nation of their esterifying power by GC,Monascus cultured in rice substrate has stronger esterifying power than Monascus cultured in other substrates.%以酯化红曲为含菌源,分离纯化出酯化力强的功能菌种红曲霉.经形态观察,初步确定此次分离出的红曲菌种为两种红曲霉.选取其中4株为试验菌株,在不同的培养底物中,经固态纯种发酵制成固态红曲,从气相色谱仪测定其酯化力大小来看,红曲霉在大米培养基上生长酯化力相对其他培养基要高.
