猴头菇水不溶性膳食纤维的提取工艺研究

         

摘要

采用酸碱浸提法进行了猴头菇水不溶性膳食纤维的提取试验,以NaOH浓度、浸提温度、料液比及浸提时间进行了单因素试验,采用L9 (34)正交试验优化提取工艺.结果 表明,最佳提取工艺为:NaOH浓度0.3 mol/L、料液比1∶8、浸提时间2 h及浸提温度60℃.在此条件下,水不溶性膳食纤维提取率为46.03%.%The extraction process of water-insoluble dietary fiber from Hericium erinaceus by alkali solution was investigated. The single factor experiment was studied by NaOH concentration, extracting temperature, solid to liquid ratio and extracting time. The optimal extractions conditions were obtained by L9 ( 34)orthogonal methodollgy. The results showed that the optimized processing conditions were: NaOH concentration 0.3 mol/L, extracting temperature 60 ℃, solid to liquid ratio 1∶8 and extracting time 2 h. Under these conditions, the yield of water-insoluble dietary fiber was 46.03%.
