Water-insoluble dietary fiber(IDF)form prickly ashseed was prepared by using ex-traction conditions in ultrasonic-two enzymatic synergistic .The effects of pH ,enzyme con-tent ,enzyme temperature and enzyme processing time were tested .Then ,the swellng capaci-ty ,wate holding capacity ,bound water capacity ,fat bindng capacity ,emulsifying capacity of the IDF were determined ,and absorption of NO2 - and sodium cholate was analyzed .The op-timum extraction conditions were as followed :pH2 ,ratio of solid-liquid 1:25(g/mL) ,pepsin dosage 2% ,37 °C ,ultrasonic power 100 W ,pepsin extraction time of 80 min;and then adjus-ted to pH5 ,dosage of glucoamylase 2% ,50 °C ,ultrasonic power 100 W ,and glucoamylase ex-traction time of 40 min .Under the optimal conditions ,the extraction rate of dietary fiber in prickly ashseed was 68 .15% .Swelling capacity of the IDF was 3 .40 mL/g、water holding ca-pacity was 2 .76 g/g .Bound water capacity was 2 .10 mL/g .The results showed that the IDF was a good adsorption to NO2 - and sodium cholate .It could provide new souces for the pro-duction of IDF .%以花椒籽为原料,采用超声波-双酶协同提取花椒籽水不溶性膳食纤维,考察酶的添加量,酶解pH、温度、时间对提取率的影响;分析其溶胀力、持水力,结合水力、结合脂肪能力、乳化力以及对NO2-和胆酸钠的吸附能力.结果表明,花椒籽中水不溶性膳食纤维的最佳提取工艺为:花椒籽按料液比1:25(g/m L),p H=2,加入2%的胃蛋白酶,37°C,100 W超声波协同酶解80 min;再调节pH=5,加入2%糖化酶,50°C,超声(100 W)协同酶解40 min,在此条件下水不溶性膳食纤维提取率为68.15%.提取的花椒籽水不溶性膳食纤维其溶胀力、持水力、结合水力分别为3.40mL/g、2.76g/g、2.10mL/g,对NO2-和胆酸钠表现出良好的吸附能力,可作为膳食纤维开发的新资源.
