益生菌类保健食品研究进展

             

摘要

人体肠道内含有总数高达1013~1014个微生物,这些微生物菌群构成了肠道的微生态系统.肠道微生态系统平衡对维持机体的健康起到了重要的作用.许多因素包括高脂饮食、肥胖及其带来的一系列亚健康问题都和肠道菌群紊乱有关,因此,向肠道中补充益生菌是治疗或预防这些亚健康问题的重要途径.含有益生菌的食品及益生菌制品是外源补充益生菌的主要方式.国内外复配益生菌制品的保健食品品种众多,益生菌作为保健食品中常用原料,具有良好的保健作用,因此开发出新型的益生菌保健食品越来越重要.综述了益生菌产品类型及其主要保健功能,益生菌在保健食品中的应用现状,并指出了此类产品的开发前景和方向.%The human intestinal tract contains a total of 1013-1014microorganisms that comprise the in-testinal micro-ecosystem. Intestinal microflora balance plays an important role in maintaining the body's health. A number of factors,including high-fat diet and obesity with associated sub-health problems,are associated with disorders of the intestinal flora. Therefore, probiotics or probiotics-based products inter-vention to the gut is an important way to treat or prevent these sub-health problems. Probiotics-containing foods and probiotic-based products are the primary sources of exogenous probiotics supplementation. There are a large variety of probiotics-formulated products worldwide. As beneficial raw materials,probi-otics have been used in healthy foods, and the development of new probiotics-contained health food is more and more important. This article summarizes the types of probiotics-based products and their main health-maintaining functions. The application status and development prospect of probiotics in health food are also stated,which will provide a direction for the development of probiotic products in the future.
