富铬糯玉米芽快餐营养粉的研制

摘要

Objective:The formula of chromium-enriched germinated waxy corn.Methods: Instant nutritional flour, including soymilk flour, maltodextrin and sucrose as part of the raw material, was optimized by orthogonal experiment.Results:Showed that the optimum formula were as follows: germinating waxy corn flour 70％, maltodextrin 11％,soymilk flour 10％,sucrose 9％.Conclusion:The obtained instant nutritional flour has good appearance,better flacor,nice taste and rich multrition.%目的:试验研究了一种富铬糯玉米芽快餐营养粉配方.方法:以富铬发芽糯玉米粉为主要原料,辅以豆奶粉、麦芽糊精和蔗糖制备糯玉米芽快餐营养粉,以感官评分为评价指标,通过L9(34)正交试验对糯玉米芽快餐营养粉最佳配比进行了优化.结果:糯玉米芽快餐营养粉的最佳配方为:富铬糯玉米芽粉70%、麦芽糊精11%、豆奶粉10%、蔗糖9%.结论:研制的糯玉米芽快餐营养粉成品感官优良,冲调性好,营养丰富.
