[Objective] In order to overcome the latent toxicity of synthesize antioxidant, extract antioxidant from savageness plants. For the actuality of abundance polyphenolic compounds existing in Chinese jujube, it makes quick and ingenious research on the ability of clearing NO2, DPPH ? , ? OH for " Jinsixiaozao" as study object. [ Method] Preliminary study the ability of polyphenolic compounds from Chinese Jujube to clear NO-2 , DPPH ? , ? OH using rapid and delicacy in vitro experiments. [Result] There were evident differences in the ability of clearing NO2, DPPH ? , ? OH in different development period, different parts of Jujube. [ Conclusion] It proves that polyphenolic compounds in Chinese jujube have good antioxidant activity, and has good health ('are ability and exploitation future.%[目的]为克服合成抗氧化剂的潜在毒性,从枣果中获取天然抗氧化剂,并探讨枣多酚的生理功效.[方法]以我国金丝小枣为研究对象,利用快速、灵敏的体外试验,对枣果多酚物质清除NO2-、DPPH·、·OH能力进行初步分析和评价.[结果]研究发现,枣果不同发育时期,枣皮、枣肉和枣核不同部位多酚物质对NO2-、DPPH·、·OH的清除能力存在差异.[结论]事实证明,枣果多酚物质具有良好的体外抗氧化活性,有良好的保健功能与开发前景.
