The Box-Benhnken central composite design and response surface methodology (RSM) were adopted to obtain the optimal conditions of extraction of polysaccharides from black mung bean (WPBM) based on the single factor test, taking extraction yield of WPBM as the response value and liquid-solid ratio, extraction time and temperature as the factors. The results showed that the optimum extraction conditions of WPBM included liquid-solid ratio 48 mL/g, extraction temperature 87 °C and extraction time 97 min. Under these conditions, the yield of WPBM was up to 16. 004%, the relative error was merely 1. 37% compared with the predicted value(16. 226%).%为了优化黑绿豆水溶性多糖(WPBM)的提取工艺,利用Box-Benhnken中心组合设计原理和响应面分析法,在单因素试验基础上,以WPBM提取率为响应值,选取液料比、提取时间和提取温度等3因素,研究各因素及其交互作用对WPBM提取率的影响.结果显示:WPBM的最佳提取条件为液料比48 mL/g、提取温度87℃、提取时间97 min,在此条件下,黑绿豆WPBM实际提取率16.004%,与理论预测值(16.226%)的相对误差仅为1.37%.
