胶原蛋白的应用及其发展前景

Collagen is the most abundant protein in the body of mammal, it is widely used in many fields for its specific physicochemical property and fine biocompatibility. The features and functions of collagen and its application in fields of food, cosmetics and so on are reviewed and its development prospect is proposed in this paper.%胶原蛋白是哺乳动物体内含量最丰富的蛋白质,其独特的理化性质和优良的生物相容性,在许多领域得到了广泛应用.综述了胶原蛋白的功能特点及其在食品、化妆品等领域中应用,并对其开发前景进行了展望.
