Frive yeast cultures from five strains of red yeast( named art*Iclally A,B,C, D and Erespectively)contained crude protein at 44. 5, 42. 0, 36.8, 54. 6 and 57. l% respectively, andxanthophylls at 37. 6, 108. 6, 53. 5, 72. 8 and 363.2mg/kg espectively,on dry matter basis.Studies on medium composition showed that the five strains of red yeast could utilize urea as thesole nitrogen source and starch as the sole carbon source effectively. Studies indicated that thefive yeast curtures were rich in protein and xanthophylls compared with several cornconcentrates,and the five strains of red yeast should be studied further as potential naturalsources of protein and pigment for animal production.
