The design of Mozzaralla cheese stretcher is desribed in this paper, which includes theory analysis,mechanical design and preparation trial. The stretcher is controllable to heat and stretch the cheese curd. An die plate with even-distributed small holes is installed at the outlet of the stretcher. 20 mm-30 mm diametered cheese is extuded directly to the receiver. The smaller-sized cheese would reduce the chilling time.
