The security of food and food nutrition have attracted much attention with the improvement of peo-ple's living standards. Trace elements in milk and dairy products have corresponding detection methods and lim-it standard content of heavy metals, however, the content of aluminum and nickel in milk and dairy products is not required by the corresponding product standard and its limited standard. A method for the determination of aluminium and nickel in milk and dairy products was successfully established by (in ductively coupled plasma mass spectrometry)ICP-MS. Method detection limit of Al and Ni was 0.082 mg/kg and 0.011 mg/kg;the corre-lation coefficients of curves was 0.9996 and 0.9998; the average recovery rate was 85.22 %-93.23 % and 88.13%-95.11%, and the relative deviations were 2.53%-3.06%and 2.56%-3.23%, respectively. This new method developed in this study can detect large amounts of milk and dairy products, the data accumulation can provide reference for detection method and limit requirements in the future.%随着人民生活水平提高,食品安全及食品营养备受关注,乳及乳制品中微量元素有相应检测方法,其重金属含量也有限定,但对乳及乳制品中铝、镍含量却没有相应产品标准及其限定标准要求.本试验利用电感耦合等离子体质谱仪成功建立乳及乳制品中铝、镍含量的电感耦合等离子体质谱检测方法.铝、镍检出限分别为0.082、0.011 mg/kg;曲线相关系数分别为0.9996、0.9998;加标平均回收率分别为85.22%~93.23%、88.13%~95.11%;相对偏差分别为2.53%~3.06%、2.56%~3.23%,并利用新建方法对大量乳及乳制品进行检测并对数据进行积累,为日后检测方法及限定要求提供参考.
