通过分光光度法测定体外模拟胃液条件下紫甘薯花色苷对亚硝酸盐的清除率和对亚硝胺合成的阻断率,探究胃液条件、反应时间和紫甘薯花色苷浓度对亚硝化反应的抑制作用。结果表明,随着浓度提高和反应时间延长,紫甘薯花色苷对亚硝酸盐的清除能力和阻断亚硝酸胺合成能力有较明显提高,不同模拟胃液条件下效果也有一定差异。%In different simulate gastric juice in vitro,the rate of nitrite scavenging and nitrosamine interdiction of purple sweet potato anthocyanin was measured by spectrophotometry to explore the inhibition of nitrosation of simulated condition of gastric juice,reaction time and concentration.The results showed that the rate of nitrite scavenging and nitrosamine interdiction increased markedly with the concentration and reaction time,the level also differed in different simulate gastric juice.
