不同干燥方法对三叶青活性成分含量的影响﹡

         

摘要

目的:探讨不同干燥方法对三叶青活性成分含量的影响。方法选取三叶青中总黄酮、总多酚和多糖3种主要活性成分作为评价指标,分析测定三叶青鲜品及冷冻干燥、真空干燥、热风干燥3种不同干燥方法的三叶青总黄酮、总多酚和多糖含量。结果三叶青鲜品和3种干燥方法的总黄酮含量分别为7.68,7.73,6.65,6.36 mg/g,总多酚含量分别为8.69,8.88,8.32,6.51 mg/g,多糖含量分别为6.39%,6.52%,4.87%,5.11%;传统的热风干燥方法对总黄酮、总多酚和多糖造成的含量损失分别为17.18%,25.09%,20.03%,真空干燥对总黄酮、总多酚和多糖造成的含量损失分别为13.41%,4.25%,23.79%,冷冻干燥的三叶青活性成分含量与三叶青鲜品相当,几乎没有损耗。结论不同的干燥方法对三叶青活性成分含量影响很大,冷冻干燥能最大程度地保留三叶青活性成分,适合作为三叶青干燥加工方法。%Objective To investigate the influence of different drying methods on the contents of active ingredients in Tetrastigma hemsleyanum. Methods The contents of the active ingredients total flavonoids,total polyphenols and polysaccharides in fresh,freeze-dried,vacuum-dried and hot air-dried Tetrastigma hemsleyanum were analyzed with total flavonoids,total polyphenols and polysaccha-rides as the evaluation indexes. Results The total flavonoid contents were 7. 68,7. 73,6. 65,6. 36 mg/g respectively;the total polyphe-nols contents were 8. 69,8. 88,8. 32,6. 51 mg/g respectively;the polysaccharides contents were 6. 39%,6. 52%,4. 87%,5. 11% respec-tively in the three different drying methods. The loss of total flavonoids,total polyphenols and polysaccharide contents caused by the conventional hot air-drying method were 17. 18%,25. 09% and 20. 03% respectively,and the loss caused by the vacuum-drying method were 13. 41%,4. 25% and 23. 79% respectively,while the total flavonoids,total polyphenols and polysaccharide contents by the freeze-drying method were similar to those in fresh Tetrastigma hemsleyanum with hardly any loss. Conclusion Different drying meth-ods have great impact on the active ingredients contents of Tetrastigma hemsleyanum The freeze-drying method is able to preserve the active ingredients of Tetrastigma hemsleyanum to the maximum extent and is most suitable to serve as the drying method for Tetrastig-ma hemsleyanum.
