江苏省《食品安全地方标准方便菜肴》跟踪评价报告

         

摘要

目的:了解《食品安全地方标准方便菜肴》的落实执行情况,分析执行中存在的问题,提出标准修订的相关建议。方法采用问卷调查、现场调查、指标验证、专家咨询等方式开展跟踪评价。结果回收有效调查问卷74份,调查20家省内的方便菜肴生产企业,指标验证50件样品。发现本标准在执行过程中存在非方便菜肴类产品套用本标准;违反标准规定添加防腐剂;运输温度条款缺乏可操作性;食盐、固形物指标需要修订等问题。结论本标准部分条款需要修订完善,同时要进一步加强本标准的宣贯培训。%Objective To get informed about the enforcement of“The regional food safety standard - convenience dishes”,to analyse the problems concerning its implementation,to propose suggestions for the revision of standards.MethodsMaking evaluation by keeping track of data elicited through the questionnaire survey,field survey,index validation and expert consultation. Results Based on 74 copies valid questionnaires retrieved from the survey,investigation results of 20 convenience food producers in jiangsu province and 50 samples for index validation,it is found that there are cases of non-convenience dishes referring to standards intended for convenience dishes,and problems such as adding preservatives ilegaly,impratical terms for transportation temperature,and salt and soild content indexes requiring amendment. Conclusion Parts of standards need to be revised and training programs are needed their publicity and enforcement.
