本文研究了DHA与ARA微胶囊粉末在加速储藏过程中质量分数、表面油、过氧化值等理化指标的变化,结合感官评价指标分析微胶囊化DHA与ARA粉末的应用稳定性,为婴幼儿配方奶粉生产过程中遴选微胶囊化DHA与ARA提供科学依据.%This paper mainly analyzed the content variation trends of microencapsulated DHA and ARA,physical and chemical indicators such as surface oil,peroxide value during the acceleration test.The stability of microencapsulated DHA and ARA powder was analyzed with sensory evaluation to provide scientific basis for microencapsulated DHA and ARA powder selection.
