乳酸菌胞外多糖结构及其功能多样性的研究进展

摘要

从乳酸菌胞外多糖的结构组成与功能特性两个角度系统地综述了乳酸菌胞外多糖研究进展,对其主要功能性及其共识性的关键结构进行归纳总结,旨为乳酸菌胞外多糖的构效关系研究提供参考.%This paper reviewed the research advances on exopolysaccharides (EPSs) produced by lactic acid bacteria (LAB) from two aspects of the structure and functional properties.The main function of LAB-EPSs and its key structure of consensus were summarized,in order to provide references for researching on the structures related with functions of LAB-EPSs.
