The aromatic components in dried pepper are analyzed using headspace solid-phase microextraction and gas chromatography/mass spectrometry (SPME-GC/MS).Sixty-three kinds of components in dried pepper are determined by four types of SPME with different coating fibers,the extraction effects and characteristics of aromatic components in dried pepper are compared,which display that the SPME of PDMS or DVB/CAR/PDMS shows better performances.%采用顶空固相微萃取-GC/MS联用对干辣椒中的香气成分进行了初步分析,用4种不同涂层的SPME鉴定了干辣椒中的63种成分,比较了其对干辣椒中香气成分的萃取效果和特点,该实验显示选用PDMS或DVB/CAR/PDMS萃取头较佳.
