According to the contrast experiment and sensory evaluation,the yeast extract and its application in hotpot base seasoning are studied.It is proved that yeast extract plays a significant role in promoting the flavor of hotpot base seasoning.%通过应用对比实验和感官品评的方法,对纯品酵母抽提物及其在火锅底料中的应用进行了分析;证明了此款酵母抽提物具有提升火锅底料风味的显著作用。
