荧光定量 PCR 法检测芝麻酱成分

摘要

芝麻酱营养丰富，是深受群众喜爱的调味料之一。芝麻酱中是否含有或仅含有芝麻成分一直是消费者关心的问题。建立了 TaqMan 荧光定量 PCR 检测芝麻酱成分的方法，检测成分包括芝麻、花生、水稻、大豆和玉米。应用该方法对来自餐饮环节的49份芝麻酱样品进行成分检测，并对非单一成分的样品进行成分相对含量的分析。结果显示3份样品中仅检出芝麻成分，2份仅检出花生成分，所有样品均未检出水稻、大豆和玉米成分。该方法为芝麻酱中成分检测提供了检测方法，以满足食品监管的更高要求。%Sesame paste is a nutritious and popular condiment.Whether it contains or only contains sesame has been a matter of concern to consumers. TaqMan FQ-PCR methods for detecting ingredients in sesame paste are established,including sesame,peanut,rice,soybean and corn. 49 kinds of sesame paste from catering industry are analyzed,as well as the relative content of samples with more than one ingredient is detected.Sesame ingredient without other ingredients is detected in 3 samples,while peanut in 2.The method has provided a novel idea for ingredient test in sesame paste,to meet the higher requirement of food supervision.
