食用油脂的质量与安全检测一直是食品分析领域的难点和热点问题。纳米技术在油脂分析中显示了良好的应用前景。该文概述了纳米技术在油脂质量与安全检测研究中的最新进展，并介绍了用于油脂检测的不同纳米材料。讨论了纳米技术在油脂检测中的发展趋向。%The determination of quality and safety of edible oils has been a difficult and hot issue in food analysis. Nanotechnology shows a good application prospect in oil analysis. This paper summarized the latest progress of nanotechnology in the study of the determination of quality and safety of edible oils,introduced different kinds of nanomaterials and also discussed the development trend of nanotechnology in the determination of edible oils.
