PROBLEM TO BE SOLVED: To provide an evaluation method for experimentally evaluating the relish in oil fried food even without performing any functional tests for experimentarily evaluating the mouthfeel of oil fried food having batter coating.;SOLUTION: In the method for evaluating relish in oil fried food, the relish in the oil fried food is evaluated by an oilness value of oil fried food obtained by using moisture content contained in the batter coating of the oil fried food having the batter coating and the oil content, an acoustic value obtained by acoustically analyzing a sound and/or vibration that is generated when crushing and/or chewing the oil fried food, and/or a single axis compression rupture evaluation value obtained from a rupture curve by acquiring the rupture curve of the oil fried food by single axis compression testing equipment.;COPYRIGHT: (C)2003,JPO
